How to Make a Cast Iron Keto Blackberry Cobbler

I still can’t believe just how easy it honestly is to make this cast iron keto blackberry cobbler:

  • Preheat the oven. Preheat your oven to 350℉.
  • Combine the ingredients. Add your choice of either fresh or frozen blackberries, a low carb granulated sweetener, xanthan gum, lemon juice, and lemon zest to a large cast iron pan (or a baking dish) and toss to combine.
  • Add the topping. Spoon the homemade topping mixture over top of the cobbler (see below for details on how to make it).
  • Bake. Bake the cobbler in the preheated oven for 20-25 minutes or until the topping is golden.
  • Serve. Serve warm.

How to Make the Best Homemade Blackberry Cobbler Topping

It’s also super easy to make the homemade blackberry cobbler topping as well:

  • Combine the ingredients. Add the almond flour, chopped almonds, unsweetened finely shredded coconut, a low carb granulated sweetener, melted butter, and ground cinnamon to a bowl and mix to combine.
  • Add to the cobbler. Spoon the topping mixture over top of the cobbler and proceed with finishing the recipe.

Ingredients

For the filling: 

  • 4 cups blackberries, fresh or frozen 
  • 1 tsp lemon juice
  • ½ tsp lemon zest 
  • ¼ cup granulated Stevia or other low carb granulated sweetener
  • 1 tsp xanthan gum

 

For the topping: 

  • 1 cup almond flour
  • ¼ cup almonds, chopped
  • ¼ cup unsweetened finely shredded coconut
  • ¼ cup granulated Stevia or other low carb granulated sweetener
  • ¼ cup butter, melted 
  • ½ tsp ground cinnamon

Instructions

  1. Preheat oven to 350ºF. 
  2. Add the blackberries, sweetener, xantan gum, lemon juice and zest to a large cast iron pan or baking dish and toss to combine. 
  3. Add the almond flour, almonds, coconut, sweeter, cinnamon and butter to a bowl and mix to combine. 
  4. Spoon the topping over the blackberries.  
  5. Bake the cobbler for 20 -25 minutes or until the topping is golden.
  6. Serve warm.
