Few things in life are as comforting as warm homemade biscuits fresh out of the oven. Here’s how I enjoy comforting keto biscuits and gravy in a low carb way, without sacrificing taste or texture.
- Combine the dry ingredients. For easier and more even mixing, combine the dry ingredients first: almond flour, garlic powder, salt, baking powder, and xanthan gum.
- Combine with the remaining ingredients. Use a separate bowl and combine the egg and softened butter. Add the almond flour mixture in with the egg mixture and mix to combine.
- Refrigerate. Cover the dough and refrigerate for a minimum of 2 hours. Before you take out your dough, preheat your oven so it’s nice and hot.
- Prepare the dough. Roll your chilled dough into 5 even balls and then flatten each ball into a disk before placing them on the prepared baking sheet.
- Bake. Bake the biscuits for 12-14 minutes or until they’re golden brown. Remove from the oven and set aside.

These flaky low carb biscuits are amazing when they’re smothered in gravy. Here’s how to make a homemade sausage gravy that goes perfectly with these keto biscuits:
- Melt the butter. Use a large skillet and melt the butter over medium heat.
- Cook the sausage. Add the breakfast sausage and cook until it’s no longer pink. The breakfast sausage gives this gravy and amazing, herby flavor.
- Combine with the remaining ingredients. Combine the broth and cream cheese and then stir in with the sausage. Then combine the xanthan gum and heavy cream and stir in. Add the black pepper to season and mix everything to combine.
- Cook. Continue to cook the gravy, stirring frequently, until it has thickened to your liking.
- Serve. Split each biscuit in half and serve with warm gravy.

Here are my top 3 tips for ending up with perfect low carb keto biscuits every time:
- Pick the right type of almond flour. Make sure that you’re using a finely ground, blanched almond flour so that your biscuits end up with the best texture. Also, make sure to use fresh almond flour.
- Pack your dough firmly. When you’re pressing your dough into disk shapes, make sure that you’re doing it firmly so that they hold together, otherwise they may fall apart after cooking.
- Space them out evenly. When you place your biscuits on the baking sheet, give them about one inch of space between them. They don’t rise as much as regular biscuits will because of the ingredients used so that should be more than adequate.
What’s the Best Way to Reheat Biscuits and Gravy?
Whenever I want to heat up these biscuits to enjoy as leftovers, I simply wrap them in a damp piece of paper towel and then microwave them on high for 20-30 seconds. If they’re still not hot enough for you, simply toss them back in the microwave for an extra 10-15 seconds and they should be good to go!
On the other hand, whenever I want to reheat the gravy, I prefer to add it back into a skillet and then slowly reheat it over a low temperature. Just make sure to stir the gravy as you heat it up so that it warms evenly throughout.
How to Properly Store Keto Biscuits and Gravy (+ Can You Freeze Them?)
As long as you keep your biscuits and gravy sealed up in airtight containers and keep them in the fridge, you can expect them to last for about 3-4 days before they start to go bad.
Freezing them is also an option but to be perfectly honest I find that the keto sausage gravy is better when enjoyed the same day that you make it. One option could perhaps be to cook the sausage to freeze for later and then use the frozen sausage to make a fresh batch of gravy.
Can I Make Keto Sausage Gravy without Using Breakfast Sausage?
Yes, it’s definitely possible to make a homemade gravy to go with your keto biscuits without having to use breakfast sausage. You can simply substitute it with pork stock instead.
However, full disclosure folks. If you were to ask me, this gravy turns out a lot better when you use the breakfast sausage, so I highly recommend following the recipe instructions exactly.

Ingredients
For the biscuits:
