Beer Cheese Soup (Low Carb)

  1. In a large pot melt the butter over medium heat. 
  2. Add the onion and bell pepper and cook for 5 minutes. 
  3. Add the garlic and cook for 30 seconds. 
  4. Add the cream cheese, mustard, soy sauce and paprika. 
  5. Stir until it is smooth. 
  6. Add the beer and chicken broth and whisk until smooth. 
  7. Bring to a boil. 
  8. Reduce heat to low. 
  9. Add the cheddar cheese, stirring until melted.
  10. Serve the soup with crumbled bacon and sliced green onion.
