  1. Season the chicken with salt and black pepper. 
  2. Heat the olive oil in a large skillet over medium heat. 
  3. Add the chicken and cook for 4 minutes per side. 
  4. Remove the chicken from the skillet and set side. 
  5. In the same skillet add the onion, garlic, butter and dried thyme. 
  6. Cook, stirring occasionally, until the onions are softened, about 5 minutes. 
  7. Add the balsamic vinegar and chicken broth. 
  8. Stir to combine. 
  9. Bring to a boil over medium heat. 
  10. Reduce the heat. 
  11. Return the chicken to the skillet. 
  12. Cover with a lid and simmer for 20-30 minutes or until the chicken is cooked through and the sauce is reduced to your liking.
  13. Add more salt or black pepper, if needed. 
  14. Sprinkle with fresh thyme(if using). 
  15. Serve with cauliflower mash.
