Making keto stuffed chicken breasts is a great option for when you need to whip up a tasty and well-balanced dinner in a hurry. With this recipe, you can have them ready to serve in less than 45 minutes.

How to Make Cheesy Asparagus Stuffed Chicken Breast

  • Prepare the chicken. Cut your chicken breasts in halves and butterfly them so that they’re laid open like a book.
  • Prepare the stuffing. Add the shredded mozzarella cheese, garlic powder, and cayenne pepper and mix them together in a bowl.
  • Prepare the asparagus. See the section below to see how I prepare my asparagus.
  • Season. Season with salt and pepper. Mix well.
  • Add the stuffing and asparagus to the chicken. Place ¼ of the cheese stuffing and a few asparagus spears on one side of each chicken half. Fold the other half over the top and secure the ends with toothpicks.
  • Bake. Bake for 20 to 25 minutes or until the chicken is cooked through.

How to Prepare Asparagus

I love cooking with asparagus for two reasons. One, it’s extremely nutrient-dense and two, it’s incredibly tasty when made with the right ingredients. Here’s how I prepare mine for cooking:

  • Cut to desired size. I usually like to cut my asparagus into pieces that are about two inches in length. I find that’s the ideal size for fitting the spears into the chicken breasts, along with the stuffing.
  • Trim the ends. Trim the woody ends off the asparagus because these are tough and inedible.

Can I Use Chicken Thighs for This Recipe?

If you would rather make this recipe with chicken thighs instead of chicken breasts, you’re in luck because you absolutely can. Just keep the following pointers in mind if you do decide to swap out the breasts for dark meat:

  • Go boneless. Since you’ll be stuffing the chicken, you’ll want the boneless thigh fillet. I recommend the skinless variety as well.
  • Prepare the chicken thighs top side down. Place the chicken thighs with the top side down before spreading them out.

Can Stuffed Chicken Breast Be Frozen for Later?

Yes, you can freeze these stuffed chicken breasts (or chicken thighs if you went that route) to enjoy later. Just make sure that you allow them to cool completely after cooking before you store them in the freezer.

Once they have cooled off, simply place the chicken in freezer-safe containers. They can be frozen for up to three months when stored like this.

When you’re ready to thaw them out, you can simply throw them in the oven again for about 20-30 minutes or until they’re warm inside.

Ingredients

  • 4 boneless, skinless chicken breasts halves (4-6 oz each) 
  • 2 tbsp olive oil 
  • 1216 spears asparagus, woody ends trimmed 
  • 1 cup shredded mozzarella cheese 
  • ½ tsp garlic powder 
  • ¼ tsp cayenne peeper 
  • salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F.
  2. Add the shredded mozzarella, garlic powder and cayenne pepper to a bowl and mix to combine. 
  3. Season with salt and black pepper to taste. 
  4. Butterfly each chicken breasts and lay open like a book.
  5. Season with salt and black pepper to taste. 
  6. Place ¼ of cheese stuffing and 3- 4 asparagus spears on one side of each chicken breast half.
  7. Fold remaining half of each chicken breast over stuffing, and secure with a toothpick, if necessary.
  8. Place the chicken into a lightly greased baking dish.
  9. Drizzle the chicken with olive oil. 
  10. Bake in preheated oven for 20-25 minutes or until the chicken reaches an internal temperature of 165ºF.
