Ingredients

  • 2 ¼ cups almond flour
  • 1 cup granulated Stevia or other low carb granulated sweetener of choice
  • 2 large egg whites
  • 1/2 tsp vanilla extract
  • 1 oz sugar-free dark chocolate, melted (optional) 

Instructions

  1. Preheat oven to 300ºF.

  3. In a bowl combine the almond flour and sweetener. Set aside.

  5. Whisk the egg whites until medium peaks form.

  7. Gently fold the egg whites into the almond flour mixture, working in batches. 
  8. Using a mini ice cream scoop or two spoons, form heaping tablespoons of the mixture into mounds on the prepared baking sheet. 
  9. Bake in preheated oven for 25-30 minutes or until golden. 
  10. Remove from the oven and allow to cool completely. 
  11. Drizzle with melted chocolate.
  12. Place into the refrigerator for 30 minutes to allow chocolate to set.
