How to Make Fudgesicle Keto Ice Cream Bars

  • Slowly melt the chocolate. Melt 6 ounces of sugar free chocolate. Slow is key to not burn the chocolate You can also use a no-sugar-added chocolate if sugar-free chocolate isn’t available.
  • Blend. Add the unsweetened almond milk, heavy cream, a low carb sweetener like Stevia, cacao powder, pure vanilla extract, a pinch of salt, and the melted chocolate to a blender and blend until smooth.
  • Freeze. Pour the mixture into ice pop molds and then insert ice-pop sticks. Freeze until solid.
  • Serve. Remove the bar from the mold by the ice-pop stick and enjoy.

  1. I always thought that fudgesicles were just frozen pudding. That’s what I’ve used in the past. How does this recipe improve the final results as opposed to freezing your chocolate pudding recipe?

    • Because they’re less dense before you freeze these fugdesicles (vs. using a pudding recipe), these turn out much smoother and creamier.

      Believe me, I like a good pudding pop too though, lol.

    • Coconut milk would work perfectly and would be super delicious 🙂 I’ve definitely made them like that before and they were amazing.

  2. Hi! Can you leave out the cocoa powder? Like if you melted 6 oz of the Lily’s chocolate chips? Or you still want the cocoa for added chocolate flavor?
