It seems like I can never find enough time to get everything I need done in the mornings lately. I’ve recently started a new evening job that has me staying up pretty late, which is resulting in some truly hectic mornings indeed. Thankfully, I know just the go-to breakfast option for when I’m feeling the crunch in the early AM hours. This easy and quick keto smoothie recipe is the perfect breakfast to make sure that I’m giving my body the fuel it needs in between rushing around and getting my kids ready for school. It’s such a convenient way to squeeze in some protein and healthy fats in a low carb package, and it’s even an excellent source of antioxidants as well!

This smoothie recipe really does provide you with an unbelievable amount of high quality fats. For starters, you’re getting a one-two punch combo of medium chain triglyceride fatty acids in the form of both coconut milk and MCT oil. This type of fatty acids is incredibly beneficial for anyone on a keto diet, as it’s incredibly easy for your liver to rapidly break MCT fats down and convert them into ketones. (1)
