Every now and then, I get an intense craving for some freshly baked homemade bread. There’s literally nothing quite like the smell of a loaf of bread baking in the oven. Unfortunately, I don’t always feel like going through all the trouble and effort of baking a loaf. That’s especially now that I’m eating a keto diet as well. Thankfully, there are some pretty clever workarounds for when I get those cravings. Take this effortless keto mug bread recipe for example. It only takes a few minutes to make, it’s 100% keto-friendly, and it tastes unbelievably good. So if you’re like me and you ever find yourself craving a low carb slice of freshly made bread but you’re short on time, then this recipe is for you.

So what makes this keto mug bread recipe so effortless? Two things — the amount of time it takes to make and the small amount of common ingredients it requires. To start, simply whisk together the milk, one egg, and olive oil in a microwave-safe mug. Each one of these ingredients serves to help give your bread dough it’s beginning consistency while also adding in plenty of protein and healthy fats, the two essential components of any keto meal. I especially like the use of olive oil in this recipe, as it is known to provide a wide range of health benefits, including reducing your risk of cardiovascular diseases and even helping to prevent certain types of cancer. The next step is to add in two different types of flour that we’ll be using as a wheat flour alternative. The first is almond flour, a type of baking flour typically made from blanched almonds. Not only does almond flour add a delightful nutty flavor to recipes, it’s also an excellent source of healthy monounsaturated fats. And just like eating raw almonds, this flour is capable of reducing cholesterol, lowering inflammation, and helping to lower your risk of heart disease. (2)

The second type of flour used is coconut flour. Much like almond flour, this is an incredibly nutrient-dense baking flour that also provides a nice hint of coconut flavor to your baking recipes. It’s also an excellent source of dietary fiber, protein, and healthy fat. Coconut flour is also quite low on the glycemic index, which could potentially help to make it an ideal baking option for individuals with type 2 diabetes. (3)

Aside from the key ingredients mentioned above, you’ll also need to add in some baking powder and a bit of salt to taste. After whisking everything together, microwave the mug on high for 90 seconds. With that done, you’re free to remove the bread from the mug and to slice it for serving. If you would like to toast the bread, you can do so by using a cast iron skillet and toasting your slices for about 30 seconds on each side. I’d also recommend toasting them in some melted grass fed butter to add even more healthy fats into your meal. 1 tbsp coconut flour
¼ cup almond flour
1 tbsp milk
1 tbsp olive oil
1 egg
¼ tsp baking powder
salt to taste
2 tsp butter (optional)

Notes
  1. In a microwave-safe mug place the milk, egg, olive oil and whisk to combine.
  2. Add the almond flour, coconut flour, baking powder and salt and whisk until smooth.
  3. Microwave on high for 90 seconds or until just firm to touch and toothpick inserted into the center comes out clean.
  4. Remove from the mug and slice.
  5. To toast, heat the butter in a cast iron skillet over medium heat.
  6. Add the slices and toast until golden-brown, about 30 seconds per side.
