Easy Classic Keto Pizza

1 medium cauliflower, washed, trimmed and cut into large pieces
½ cup shredded mozzarella cheese
½ cup Parmesan cheese
¼ tsp garlic powder (optional)
¼ tsp onion powder (optional)
salt to taste
- Place pizza stone in a cold oven on the lowest rack.
- Preheat the oven to 450°F.
- Add the cauliflower in a food processor and pulse until forms a powder.
- Place in a microwave safe bowl and microwave on high for 4-6 minutes or until soft.
- Transfer to a clean, dry kitchen towel and allow to cool.
- Wrap the towel around the cauliflower and squeeze out as much liquid as possible (the drier the cauliflower is, the crust will be better).
- In a large bowl combine the cauliflower, eggs, mozzarella, Parmesan, garlic powder, onion powder and salt.
- Place the cauliflower mixture between two pieces of parchment paper and roll out to 1/4″ thick.
- Carefully remove the top piece of parchment paper.
- Using the back side of a baking sheet, slide the crust with the parchment paper onto the hot pizza stone.
- Bake for 10-15 minutes.
- Remove from the oven and add desired toppings.
- Bake for an additional 5-10 minutes.
