Easy Classic Keto Pizza

Ingredients

1 medium cauliflower, washed, trimmed and cut into large pieces

2 eggs

½ cup shredded mozzarella cheese

½ cup Parmesan cheese

¼ tsp garlic powder (optional)

¼ tsp onion powder (optional)

salt to taste

Instructions

  1. Place pizza stone in a cold oven on the lowest rack.
  2. Preheat the oven to 450°F.
  3. Add the cauliflower in a food processor and pulse until forms a powder.
  4. Place in a microwave safe bowl and microwave on high for 4-6 minutes or until soft.
  5. Transfer to a clean, dry kitchen towel and allow to cool.
  6. Wrap the towel around the cauliflower and squeeze out as much liquid as possible (the drier the cauliflower is, the crust will be better).
  7. In a large bowl combine the cauliflower, eggs, mozzarella, Parmesan, garlic powder, onion powder and salt.
  8. Place the cauliflower mixture between two pieces of parchment paper and roll out to 1/4″ thick.
  9. Carefully remove the top piece of parchment paper.
  10. Using the back side of a baking sheet, slide the crust with the parchment paper onto the hot pizza stone.
  11. Bake for 10-15 minutes.
  12. Remove from the oven and add desired toppings.
  13. Bake for an additional 5-10 minutes.
