Bow Tie Keto Pasta from Scratch (Low Carb Farfalle)

  1. Place the almond flour, coconut flour, xanthan gum and salt in a food processor and pulse a few time to combine. 
  2. With the motor running, add the egg and vinegar.
  3. Add water a little at a time, adding more if necessary until mixture comes together in a ball.
  4. Wrap the dough in cling film and knead it for a 1-2 minutes or until it is smooth and elastic. 
  5. Refrigerate for minimum one hour. 
  6. Cut the dough into four equal wedges.
  7. Sprinkle the dough generously with coconut flour.
  8. Roll out the pasta dough either by hand or using a pasta maker. 
  9. Cut into 2×1-inch rectangles. 
  10. Pinch the rectangles in the middle to shape them into bow tie pasta. 
  11. Place the pasta on a baking sheet and refrigerate until ready to cook.
  12. Heat the olive oil or butter in a nonstick pan over low heat. 
  13. Add the pasta and cook 1-2 minutes per side or until golden. 
  14. Remove from the heat and serve with your favorite sauce.
